Dried Tomatoes
Originally, Dried Tomatoes were salted and sun-dried to preserve them. Now there are other forms including marinated in olive oil, and salt-free.
Tomatoes are abundant in Glutamate, which the drying process concentrates and intensifies. In addition, drying creates the Umami nucleotide Guanylate.
Dried Tomatoes are used in thin strips as a salad topping, and rehydrated are used in simmered dishes. Roasted and marinated in olive oil they are well known as a tasty Italian starter.
